Silence, a gold standard

It’s a very long time since i was thinking about backups. I want to, i have to make backups… but in an opensource way.
For me it’s important:

1. Easy way to restore single files and/or directory
2. Backup should be *fast*, i don’t want to stay in front of the pc looking at the monitor
3. Open format: i wanna be able to even change my backup suite and be capable of restorin’ data.

I am open to any kind of suggestion.
